Steps to make Moroccan Minced Lamb
- Chop lemon in quarters, add lemon juice of 1 quarter into jug with half can of chopped tomatoes, tomato paste, honey and salt.
- Chop ginger, and onion into little pieces, add olive oil to large frying pan (make sure you can put a lid on it) heat, once oil is hot add spices and Tabasco, then stir in onions and ginger, cook for 3-5mins
- Add tomato sauce and mix water until you have a good sauce constituency not to thick or thin.
- Add olives and chick peas
- Add lamb mince balls and cover with lid
- After 15-20mins take the lid off sprinkle chopped coriander, add remaining quarters of lemons and hummus, don't stir just add on top of sauce.
- Cook for extra 10mins letting the sauce reduce.
- Serve on plate of salad leaves, with side of cuscus
