- 1 Lamb Leg or Raan
- 2-3 tbsp Ginger garlic paste
- 2-3 tbsp Oil or Ghee
- 2 tbsp Red Chilli powder

- 2-3 tbsp Sumac
- 1 tsp Garam Masala
- 2 tbsp Salt
- 2-3 tbsp Green Masala paste
- 2 tbsp Raw Papaya paste (optional)

- The first thing to be done is clean the raan and make slits all along. It is advisable to do it as it will help in getting a juicy and a succulent raan after grilling. Papaya paste helps in cooking it perfectly. But I didn't use it in this one. Marinate it for one whole day. It's an important part of this amazing dish. I have marinated it for a full day so that the meat is succulent and juicy. For the Green Masala, grind 3-4 Green Chillies, and 1 bunch of Mint and Coriander Leaves each.



- Baste it with Oil before grilling. Preheat the oven to the maximum. You can straight away roast it now. Or midway through, use aluminum foil to wrap it up fully in order to prevent it from getting burnt.


- Bake it for nearly 2 or 3 hours as required. Keep checking after every 40 minutes and baste with little Oil or Butter or Ghee each time.
- Serve it with any Indian Bread and lots of Salad. Enjoy! Yum!
